Garlic ginger rice with cajun fish

We used a pink snapper fillet with the skin on. You could also use chicken or prawns instead of the fish.

1.Rub fish all over with cajun spice mix. Heat oiled wok, cook fish, skin-side down, about 5 minutes or until skin is crisp. Turn fish, cook about 5 minutes. Remove fish from wok, cover to keep warm. Stir-fry garlic and ginger in heated oiled wok until fragrant. Add cooked rice, green onion and 1 tablespoon cajun spice mix, stir-fry until hot, season to taste. Serve fried rice topped with fish, a handful of fresh coriander leaves and a dollop of yogurt.
