Method

1.Preheat oven to 180°C (160°C fan-forced). Grease a 3 litre (12-cup) oven-proof dish. Place chicken in a large bowl. Add seasoning; toss to coat.
2.Heat oil in a large frying pan over moderate heat. Cook chicken, in batches, for 10 minutes or until almost cooked through.
3.Meanwhile, place couscous in heatproof dish. Stir in crumbled stock cubes, 3 cups boiling water, butter, garlic, zest and juice. Season to taste. Cover with plastic food wrap. Set aside for 5 minutes or until liquid is absorbed.
4.Arrange chicken over couscous; cover with foil. Bake for 20 minutes. Remove foil. Bake for 5 minutes more or until chicken is cooked through.
5.Transfer chicken to serving plates. Using a fork, fluff and separate couscous grains. Stir parsley into couscous. Serve with lemon wedges.

You’ll need 2 large lemons. Try lemon pepper seasoning instead. Use chicken drumsticks instead of wings. Cooking time may vary.
