Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Line 2 baking trays with baking paper.
2.Process flour, icing sugar and butter, in short bursts, to make crumbs. Add cold water; process until mixture forms small, moist clumps. Turn out onto a sheet of baking paper; gather into a disc.
3.Roll out to 7mm thick. Using 3.5cm, 4.5cm and 5cm round pastry cutters, cut out equal quantities of each size from dough. Re-roll leftovers; cut out more rounds.
4.To assemble, place a 5cm round on prepared tray. Place a 4.5cm round next to it, overlapping about 1cm. Press together to seal. Place a 3.5cm round next to the 4.5cm round, overlapping slightly. Press together.
5.Repeat to make about 14 snowmen. Using blunt end of a wooden skewer, press a hole into top of smallest rounds (to thread ribbon through later). Bake 12 minutes, or until golden brown; cool on trays.
6.Sift extra icing sugar into a medium bowl. Add hot water; stir until smooth. For each snowman, carefully dip one surface into icing, letting excess drip into bowl. Place on a wire rack.
7.Working quickly, arrange rainbow choc chips for eyes and Smarties for buttons; sprinkle with coconut. Set. Thread ribbon through holes.
You may need to reopen the hole using a skewer or toothpick before threading with ribbon.
