Method
1.Place noodles in a large pot or bowl and cover with boiling water.
2.Heat oils in a large frying pan or wok and fry the prawns, garlic and ginger for 1-2 minutes until prawns turn pink. Season with salt and pepper.
3.Add wine, sprouts, leek and spring onion and sauté for 1-2 minutes more.
4.Drain noodles and add to pan then quickly toss to combine.
5.Divide among serving bowls, garnish with sliced green spring onion leaves and serve with limes for extra zing.
