Method
1.Place all ingredients, except fish, sesame oil and sesame seeds, in a large coffee plunger. Pour in 1 litre of boiling water and rest the plunger lid on top (do not plunge yet) to keep heat in. Steep for 10 minutes then carefully plunge, trapping all the bits at the bottom, leaving a strained broth.
2.Meanwhile, heat 2 teaspoons of the sesame oil in a heavy pan. Fry fish for 2-3 minutes on each side, until just cooked through. Transfer fish to two serving bowls. Pour broth over fish, top each bowl with a drizzle of sesame oil and a smattering of sesame seeds. Serve hot.
