Fish baked in paper with leeks and carrots

This is an easy way to steam fish and the brilliant part is, the vegetables can be steamed at the same time.

Method

1.Preheat oven to 200C. Cut out 4 large circles of baking paper – you want the circles to be larger than the size of the fish. They can’t be too big and if they are too small, the fish won’t steam properly.
2.Divide the ingredients between each circle, placing them in the centre of one half of each circle. Pile up the leeks and carrots, add the fish, then the dill, lemon and seasoning. Scrunch up the sides of the paper, then add the oil and wine. Make a parcel by folding up the sides.
3.Place each parcel in a big piece of foil, scrunch it up to seal then place each on a baking sheet and bake for 20 minutes. Discard the foil and serve the parcels on large plates.
