1.Preheat oven to 200°C. Line two pizza trays with baking paper, then place bases on trays. Spread each one with sauce to cover.
2.Sprinkle sauce with pizza cheese. Top with pancetta, figs and gorgonzola.
3.Bake for 10-15 minutes until bases are golden and cheese is melted.
4.Scatter pizzas with rocket and serve immediately.

Make homemade pizza dough by combining 1 cup warm water, 7g sachet dried yeast and 1 teaspoom sugar. When frothy, stir into 2½ cups plain flour with a little salt to form a dough. Knead for 5 minutes until smooth. Prove dough in a lightly oiled bowl until doubled. Punch dough down, then knead and use as required.
