Method

1.Cook fettuccine in a large saucepan of boiling, salted water according to packet directions. Drain.
2.Heat oil in a frying pan on medium heat. Cook artichokes, anchovies and garlic for 3-5 minutes. Add to pasta with tuna and parsley. Gently stir to combine. Season and serve with parmesan.

Reserve 1 cup of cooking water so if the pasta needs moistening when adding the sauce, you can add a little to make it the correct consistency.
