Method
1.Preheat oven to 220°C (200°C fan-forced). Line 2 oven trays with baking paper.
2.Heat oil in a large frying pan on high. Cook tomato 3-4 minutes, stirring occasionally, until slightly thickened. Season to taste and set aside.
3.Place pizza bases on trays. Spread each with about half the tomato sauce. Top with eggplant and mozzarella. Drizzle with a little extra oil.
4.Bake 8-10 minutes, or until bubbling and starting to brown around edges. Transfer to a cutting board. Scatter generously with basil leaves. Cut into wedges to serve.
Try replacing the canned tomatoes with a prepared pizza sauce. Buy char-grilled eggplant in jars or from the deli counter.
