Method
1.Preheat oven to 190°C (170°C fan-forced). Lightly grease six 1-cup ramekins with cooking oil spray. Sprinkle with sugar and arrange on a baking tray.
2.Combine custard, passionfruit and icing sugar in a large bowl.
3.Using an electric mixer, beat egg whites in a clean bowl until firm peaks form. Using a spatula, fold gently into custard mixture.
4.Fill prepared ramekins and bake for 10-15 minutes, until risen and golden. Dust with extra icing sugar and serve immediately.
Take care to add only as much sugar as you need, which will keep the carbohydrates down and stop the kilojoule count jumping.
