Method

1.Preheat oven 180°C/160°C fan forced. Grease and line a 30x20cm (base measurement) slice pan with baking paper, extending paper on long sides for handles.
2.Using an electric mixer, beat butter and sugar in a small bowl until light and creamy. Add egg; beat until just combined. Stir in silted flours. Press into prepared pan. Bake 20-25 minutes or until lightly golden.
3.Stir gelatine into 1/3 cup boiling water in a small jug until dissolved. Place lemon spread in a small saucepan. Cook and stir over low heat for 2-3 minutes or until heated through. Do not boil. Let cool slightly. Stir gelatine into lemon curd until combined. Let cool to room temperature.
4.Using an electric mixer, beat cream to stiff peaks in a small bowl. Fold lemon mixture into cream. Spread over base. Cover with plastic food wrap; chill for 2 hours or overnight until set. Cut into squares to serve.

Citrus in season is cheap – substitute orange or lime for lemon.
