Method
1.Preheat oven to 180°C (160°C fan-forced). Lightly grease a 4-cup ovenproof dish. Spread apple and pear evenly over base.
2.In a medium bowl, using an electric mixer, beat eggs until pale. Gradually add sugar, beating until mixture is thick.
3.Sift combined flours and custard powder together. Lightly fold into egg mixture, until combined. Spoon over fruit.
4.Bake 40-45 minutes, until puffed and golden. Dust with icing sugar. Serve hot with custard, cream or ice-cream.
This dish can be made in 4 individual ramekins instead – reduce cooking time to 20-25 minutes.
