Method
1.Preheat oven to moderate, 180°C. Line 2 x 12-hole shallow patty pan trays with paper cases.
2.Place flour, sugar, butter, eggs and milk in a large bowl. Using an electric mixer, beat on medium speed 2-3 minutes, until mixture is smooth and pale. Fold currants through mixture.
3.Spoon heaped tablespoons of mixture into prepared pans. Bake 12-15 minutes, until golden and firm to touch. Cool in pans.
4.Dust with icing sugar before serving.
