Method
1.Using an electric mixer, beat butter, sugar and essence in a small bowl until light and creamy. Add egg yolk, beating until well combined. Stir in sifted flour. Mix with hands to form dough. Divide dough into 2 portions. flattening each to form a rectangle. Wrap in plastic food wrap; chill for 30-40 minutes or until firm.
2.Preheat oven to 180°C (160°C fan-forced). Line 2 large baking trays with baking paper. Roll dough between sheets of baking paper. until 3-4 mm thick. Using a small sharp knife and a ruler, cut dough into 4cm squares.
3.Place squares on prepared trays. Bake for 10-12 minutes or until golden brown. Let biscuits cool on trays for 5 minutes; transfer to a wire rack to cool completely.
4.Line a baking tray with baking paper. Sift icing sugar into a medium heatproof bowl; stir in 2 tablespoons boiling water to make a runny icing. Dip biscuits into icing, draining any excess. Place biscuits on prepared tray; set aside for 30 minutes to set. Using writing gels, pipe letters onto biscuits.
You can also use a square biscuit cutter, available from kitchen shops, to cut dough. Tint icing with food colouring. Try an assortment of coloured writing gels or decorating icing to pipe onto biscuits. Before eating biscuits, see how many words the kids can create.
