Citrus soy dressing
Method
1.Place flour on a plate; season with salt and pepper. Coat chicken in flour; shake off excess.
2.Heat oil in a large frying pan over high heat. Cook chicken, in batches, for 2-3 minutes each side or until golden brown and cooked. Transfer to a heatproof plate. Cover with foil; rest for 5 minutes. Slice thickly.
3.To make citrus soy dressing combine ingredients in a small saucepan over moderate heat. Bring to the boil. Remove from heat: cool slightly.
4.Spoon rice onto plates. Top with chicken; drizzle with dressing. Sprinkle with chives. Serve at once.
