Method
1.Preheat oven to 180°C/160°C fan forced. Grease 4 x 1-cup ovenproof dishes with melted butter. Layer pumpkin, onion and garlic in prepared dishes, finishing with pumpkin.
2.Combine cream and nutmeg in a jug, season with salt and pepper. Carefully pour 1/3 cup of cream mixture into each dish. Sprinkle with cheese.
3.Place dishes on a baking tray. Bake for 40-45 minutes or until tender when pierced with a skewer (cover with foil if over browning). Serve at once.
Budget tip: Use grated cheddar instead of parmesan. Serve with roast pork or chicken.
