1.Cook the potatoes in boiling, salted water for 10-15 minutes or until just tender. Drain and refresh under cool water.
2.Mix the mayonnaise with the sour cream, capers, lemon juice, zest and dill, then season to taste.
3.Fold half the mayonnaise through the potatoes and arrange on a serving platter. Top with flakes of salmon, followed by the cucumber and spring onion. Garnish with fresh dill tips and serve with extra mayo.
If smoked salmon’s not your thing, substitute with crispy bacon pieces or smoked chicken.
