Method
1.In a large saucepan of boiling, salted water, cook tortellini according to packet instructions. Drain and return to pan.
2.Meanwhile, heat oil in a frying pan on medium. Saute garlic for 30 seconds, until tender. Blend in cream, juice and rind.
3.Bring to boil. Reduce heat and simmer for 4-5 minutes, until sauce thickens slightly. Season to taste.
4.Toss sauce through pasta in saucepan with basil and capers, until well combined. Serve tortellini topped with extra lemon rind and salad.
Use any flavoured tortellini or ravioli you prefer. Add some finely sliced zucchini to the cream sauce, if desired.
