Method
1.Cook pasta in plenty of boiling salted water for 6-7 minutes or until tender and floats to surface. Drain.
2.Meanwhile, heat a large frying pan over moderate heat.
3.Cook and stir bacon for 2 minutes or until browned. Transfer to a large heatproof bowl.
4.Add leek and garlic to pan; cook and stir for 5 minutes or until leek softens. Stir in stock and cream.
5.Bring to the boil. Reduce heat; simmer for 5 minutes or until sauce thickens slightly.
6.Add pasta to sauce. Stir in half parmesan and half chives.
7.Spoon into serving bowls; sprinkle with remaining cheese, chives and ground black pepper.
Budget tips: Use dried pasta such as rigatoni or penne. Use 2 medium brown onions instead of leek. Wipe leek to remove grit-washing can dilute flavour.
