1.Preheat oven to moderate, 180°C. Lightly grease recesses of a 12-hole friand pan.
2.Sift icing sugar and flour together into a large bowl. Blend in pecans and 1/2 cup cranberries.
3.In a small bowl, lightly whisk egg whites with a fork until frothy. Add to dry ingredients and mix lightly.
4.Blend in butter, turning until combined. Divide mixture among prepared recesses. Sprinkle each with remaining cranberries.
5.Bake for 15-20 minutes until golden. Cool in pan for 5 minutes before turning onto a wire rack to cool completely. Serve dusted with icing sugar.
