Method
1.Preheat an oven-grill to moderate. Spread one side of bread with butter and place on a baking tray. Grill, buttered side up, until golden. Turn; sprinkle with cheese. Grill for 1 minute more or until golden. Cut into fingers.
2.Combine corn kernels, ricotta, sour cream, avocado, sauce and coriander in a medium bowl.
3.Serve dip with cheese fingers.
