Method
1.Preheat oven to 200°C (180°C fan-forced). Line a 12-hole (2 tablespoon) mini muffin tray with paper cases.
2.Using a wooden spoon, beat butter and sugar in a bowl until combined. Whisk in egg until combined. Add sifted flour.
3.Stir in milk, essence, cinnamon and peaches until just combined; don’t overmix. Divide mixture among prepared cases. Bake for 10 minutes or until a skewer inserted at centre comes out clean. Stand for 5 minutes. Transfer to a wire rack.
4.Dip muffin tops in warm melted butter. Dip in combined sugar and cinnamon. Serve warm or cold.
To make 6 regular-sized muffins, bake in a 1/3-cup muffin tray for 15-20 minutes. Try using drained, canned diced pears instead of peaches.
