Method

1.Stir vodka, sugar, water, cinnamon, rind and 3 sprigs of the thyme in a large saucepan over medium heat, without boiling, until sugar dissolves. Bring to the boil. Reduce heat; simmer 10 minutes. Cool. Cover; refrigerate until needed.
2.To serve, pour syrup and extra vodka into a large jug(s). Add apples, top up with sparkling cider, ice and remaining thyme sprigs.
