1.Preheat oven to 180°C/160°C fan forced. Grease and line a 7.5cm-deep, 21x10cm (base measurement) loaf pan with baking paper, extending paper at the long sides for handles.
2.Using an electric mixer, beat butter, sugar, flour, baking powder, eggs and banana in a large bowl, on low speed, until just combined. Increase speed to medium. Beat for 2-3 minutes or until light and creamy.
3.Chop 1/3 cup of the nuts. Stir chopped nuts and dates into mixture. Spread mixture into prepared pan; smooth surface. Top with banana chips and remaining nuts. Bake for 50 minutes or until a skewer inserted at centre comes out clean. Remove from oven. Stand in pan for 5 minutes; transfer to a wire rack to cool slightly. Dust with icing sugar. Serve.
Look far banana chips in the health food aisle of major supermarkets or at health food stores. Replace walnuts with pecans or brazil nuts.
Note
