Method
1.Preheat oven to 200°C/180°C fan. Place mini paper patty cases into four 12-hole mini muffin pans.
2.Sift flour into a bowl and mix in sugar. In a small bowl, combine egg, oil, milk and fruit mince. Fold into dry ingredients.
3.Spoon just less than 1 tablespoon of mixture into each patty case and bake for 15 minutes, until well risen and golden. Serve warm or at room temperature.
You can use this mixture to make regular-size muffins, if you like. They just need to be cooked for a little more time.
