1.Preheat oven to 180°C/160°C fan forced. Grease and line 2 large baking trays with baking paper.
2.Using an electric mixer, beat butter, sugar and vanilla in a small bowl until pale and creamy. Beat in egg until combined. Stir in sifted flour.
3.Divide dough between 2 medium bowls. Stir cocoa powder into one bowl. Knead each dough piece on a lightly floured surface for 30 seconds or until smooth. Shape each portion into a disc. Wrap in plastic food wrap; chill for 15 minutes.
4.Using a ruler, shape each piece of dough into a 4x4x16cm rectangular bar. Wrap each bar in plastic food wrap; chill for 30 minutes. Cut each bar lengthwise into 3 equal slices. Cut each slice lengthwise into 3 strips (9 in total).
5.Brush each strip of dough with egg white; stack flavours alternately in threes. To make each log, put three stacks together. Place on tray; chill for 15 minutes.
6.Using a sharp knife, cut each log into 1cm-thick slices. Place on prepared trays about 3cm apart for spreading. Bake for 15-17 minutes or until golden brown. Remove from oven; cool on trays (biscuits will firm).
