Method

1.Boil, steam or microwave potato until just tender, drain.
2.Meanwhile, make sesame lime dressing. Blend or process 1 tablespoon of the juice with egg yolk until thickened slightly. Gradually add oils in a thin, steady stream, process until mixture thickens. Stir in mirin, remaining juice and coriander.
3.Place remaining ingredients in large bowl with warm potato and sesame lime dressing, toss gently to combine.

Purple shallots are often found under the name of thai, asian or even pink shallots; used throughout South-East Asia, they are a member of the onion family but resemble garlic in that they grow in multiple-clove bulbs and are intensely flavoured. They can be eaten fresh in salads or can be deep-fried and served as a condiment.
