Pizza dough
Method
1.Make pizza dough. Combine yeast, sugar and water in a small bowl; cover. Stand in a warm place about 10 minutes, or until frothy. Sift the flour and salt into a large bowl. Stir in the yeast mixture and olive oil; mix to a soft dough. Bring the dough together with your hands. Add a little extra water, if necessary, to make sure all ingredients are incorporated.
2.Knead dough on a lightly floured surface for 10 minutes, or until smooth and elastic. Push the dough with the heel of your hand, and give it a quarter turn each time. Place the dough in a lightly oiled large bowl; cover.
3.Stand in a warm place about 1 hour or until doubled in size. “Punch” the dough down with your fist, then knead on a lightly floured surface until smooth.
4.Combine mussels and the water in medium saucepan; cook, covered, about 1 minute or until shells open. Drain, remove mussels from shells.
5.Meanwhile, preheat oven to 240°C/475°F. Oil two oven or pizza trays; place in oven.
6.Divide dough in half; roll each half on floured surface into a 30cm (12-inch) round. Place on trays.
7.Spread pizza bases with sauce; drizzle with half the oil. Bake about 6 minutes or until base is browned lightly.
8.Meanwhile, shell and devein prawns.
9.Top pizzas with garlic, seafood, tomatoes and chilli; season. Drizzle with remaining oil. Bake about 5 minutes or until bases are browned and crisp and seafood is cooked. Serve sprinkled with herbs.
