Method

Chilli salt beef

1.In a small bowl, combine soy sauce, water, wine and cornflour, stirring until smooth. Add meat, tossing to coat. Cover and chill for 30 minutes.
2.Meanwhile, make Spicy seasoning as per method below.
3.Heat half the oil in a wok or large frying pan on high. Stir-fry meat in two batches, for 1-2 minutes, until browned. Remove and keep warm.
4.Heat remaining oil in same wok. Stir-fry onion for 1-2 minutes, until just softened. Add snow peas and ginger. Stir-fry for 30 seconds, until fragrant.
5.Return beef to pan and stir-fry for 1 minute, to warm through. Sprinkle spicy seasoning over and serve with steamed rice.

Spicy seasoning

6.In a small frying pan, dry-roast chilli, salt and pepper over medium heat for 2-3 minutes, until fragrant. Shake pan occasionally to prevent spices burning. Transfer spices to mortar and pestle, and add lime zest and sugar. Pound to create dust.

Keep leftover spicy seasoning in an airtight container and use it a spice rub for barbecues. It can also he sprinkled over seafood before cooking.
