Method
1.Using a small knife, cut a 1cm-long slit in the side of each chilli.
2.Place chillies, oil, peppercorns, thyme and peel in a small saucepan over medium heat. Heat 4-5 minutes, until fragrant.
3.Allow to cool slightly. Transfer to a heatproof jar. Serve or store.
Use oil to add flavour to pasta, stir-fries, dressings or marinades.
