1.To make lemon-infused olive oil, heat oil in small saucepan. Remove from heat, add rind. Stand 10 minutes. Strain oil through fine sieve; discard rind.
2.Preheat oven to 220°C (200°C fan-forced). Oil large shallow oven tray.
3.Divide lemon slices among fish cavities and tie kitchen string around centre of fish to secure.
4.Combine half the lemon-infused olive oil with chilli and garlic in a medium bowl. Add fish and turn to coat. Place fish on tray and roast, uncovered, about 12 minutes or until cooked through.
5.Serve fish drizzled with remaining lemon oil.
