Chickpeas couscous
1.Place lamb loin and curry paste in a bowl and mix well to coat. Set aside.
2.Combine couscous and lemon rind in a bowl. Pour over boiling water. Cover with plastic wrap and stand for 5 minutes.
3.Remove plastic wrap and fluff couscous with a fork. Stir in chickpeas, cucumber, mint and lemon juice to taste. Season to taste.
4.Pre-heat a chargrill on high. Cook lamb for 3-5 minutes, turning, until cooked to your liking. Set aside to rest for 5 minutes before slicing and serving with chickpea couscous.
