1.Preheat oven to 200°C (180°C fan forced). Line two baking trays with baking paper. Place chicken on one of the prepared trays. Top each with ham and cheese. Place kumara on remaining tray. Spray with oil. Bake chicken for 30 minutes until cooked. Bake kumara for 20 minutes until tender.
2.Combine lentils, rocket, avocado and kumara in a large bowl. Whisk mayonnaise, mustard and lemon juice in a small bowl. Spoon salad onto serving plates. Serve with chicken. Drizzle with dressing.
You can use canned beans instead of lentils. Kumara is orange sweet potato.
