Method
1.Thread chicken onto 12 skewers.
2.Cook skewers on heated oiled grill plate (or grill or barbecue) until browned all over and cooked through.
3.Meanwhile, combine papaya, onion, cucumber, mint, ginger, sauce and juice in small bowl.
4.Serve skewers topped with salsa.
soak 12 bamboo skewers in water for about 30 minutes before use to prevent splintering and scorching during cooking. You can substitute mango for the papaya if you prefer.
