Chicken parmigiana

Comfort food doesn't have to mean hours in the kitchen. This classic and cheesy chicken parmigiana recipe with a rich tomato sauce creates a quick family meal that's ready when you are.

1.Preheat oven to 200°C (180°C fan-forced). Grease a 27 x 21.5cm (base measurement) ovenproof dish, 7cm deep. Cut each chicken breast fillet horizontally into 3 slices. Cut each slice in half crosswise, making 12 pieces.
2.Heat oil in a frying pan over high heat. Cook chicken, in batches, for 1 minute each side or until browned. Transfer to a heatproof plate.
3.Add onion and 2 tablespoons water to pan over moderate heat; cook and stir for 3 minutes or until soft. Remove pan from heat. Combine breadcrumbs, mozzarella, parmesan and parsley in a bowl.
4.Spread half the passata over base of prepared dish. Top with half the onion, half the capsicum, then half the chicken. Sprinkle top evenly with a third of the breadcrumb mixture. Spoon remaining passata over top.
5.Top with remaining onion, capsicum, then chicken. Sprinkle with remaining breadcrumb mixture. Bake for 25 minutes or until bubbling and golden. Serve with salad leaves.

Process 4 slices of day-old wholemeal bread to make the crumbs. We used sliced red and yellow capsicum bottled in brine.
