Method
1.Squeeze the juice from one lemon (you will need two tablespoons of juice). Combine the juice and oil in a jar and shake well.
2.Cut the remaining lemons into 24 wedges. Thread the chicken pieces, artichokes, mushrooms and lemon onto 12 skewers.
3.Cook the kebabs on a heated lightly oiled grill plate (or grill or barbecue) until browned all over and cooked through. Brush with the oil mixture and sprinkle with salt and pepper during cooking.
This recipe can be prepared eight hours ahead.
