1.Place bread in a small bowl and cover with water. Set aside to soak 5 minutes. Drain and squeeze dry.
2.Place in a large bowl with mince, green onion, half coriander and egg. Mix thoroughly and season to taste. Use damp hands to shape into about 16 equal-sized bails. Arrange on tray. Chill 15 minutes.
3.Heat oil in a large frying pan on medium. Cook meatballs in batches, 5-7 minutes, tossing frequently, until browned and cooked through. Drain on paper towel.
4.To make couscous salad, combine couscous, water and oil in a bowl. Set aside, covered, 5 minutes. Fluff with a fork to separate grains. Toss through remaining ingredients with remaining coriander. Season to taste.
5.Served meatballs with couscous. Squeeze lemon over salad when ready to eat.
