Chicken and vegetable skewers with potato smash and pesto

1.Cook potatoes in a saucepan of boiling, salted water for 15-20 minutes, until tender. Drain.
2.Transfer half the potatoes to a medium bowl. Mash with butter and milk until smooth. Roughly mash remaining potatoes. Fold into mash mixture. Season to taste. Keep warm.
3.Meanwhile, thread chicken and vegetables alternately onto skewers. Brush with oil and season to taste.
4.Spray a char-grill with oil. Preheat on medium. Cook skewers for 3-5 minutes each side until chicken is cooked through

Pesto

5.Place basil, cheese, oil, nuts and garlic in a food processor or blender. Process until smooth. Stir in cream. Serve with skewers and potato smash.
