Ingredients

Method

1.Heat half the oil in a wok or large frying pan over high heat. Whisk eggs and soy together in a small bowl.
2.Pour eggs into wok and swirl to cover base. Cook for 1-2 minutes, until just set. Remove from pan and slice thinly. Set aside.
3.Heat remaining oil in wok over high heat. Stir-fry chopped onion and garlic for 1 minute. Add chicken and sausage. Stir-fry for 2-3 minutes, until browned and cooked through.
4.Add rice and peas and toss through for 2-3 minutes. Add omelette, green onion and soy. Toss to combine. Divide among serving bowls and top with chilli and extra green onion.

You will need 2 cups of uncooked long-grain rice to make 6 cups of cooked rice.
