Method

1.Place tenderloins on a board. Top with prosciutto, basil leaf and sun-dried tomato half. Roll up tightly and secure with a toothpick.
2.Heat oil in a frying pan or char-grill on medium. Cook chicken bites for 8-10 minutes, turning occasionally, until golden and cooked. Garnish with basil, serve with aioli.

Make your own aioli by mixing roasted garlic flesh into whole egg mayonnaise with a squeeze of lemon juice. If preferred, simply brown the outside and finish in a moderate oven, 180°C, to cook through.
