Method
1.In a large saucepan, melt butter on high. Brown chicken and onion 4-5 minutes, turning.
2.Stir in curry powder, sugar and flour and cook, stirring, for 1 minute. Add tomatoes, coconut milk and apples.
3.Reduce heat to low. Simmer covered, 15-20 minutes, until chicken is tender and sauce thickened.
4.Serve with rice, coriander and lime wedges.
