Method
1.Preheat oven to moderately slow, 160°C. Line an oven tray with baking paper.
2.In a large bowl, using an electric mixer, beat spread and sugar together until pale and creamy. Beat in egg and vanilla. Fold in flour, followed by cherries, nuts and zest.
3.Drop walnut-sized spoonfuls of mixture onto tray. Flatten slightly with a floured fork and top with extra cherry quarters. Bake 15-20 minutes. Cool on trays 5 minutes before transferring to a wire rack to cool completely.
Store biscuits in an airtight container for up to 4 days.
