Cheesy tomato and basil meatballs
1.Heat half the oil in a large frying pan on high. Sauté onion and garlic for 2-3 minutes until tender. Cool.
2.In a large bowl, combine mince, egg, cheese, breadcrumbs, basil and tomato paste. Season to taste. Add onion mixture. Mix well and roll into 30 even-sized balls. Place on a baking tray. Chill for 20 minutes.
3.Heat remaining oil in same pan. Cook meatballs for 15-20 minutes, turning, until golden and cooked through.
Tomato sauce
4.Meanwhile, heat oil in a small frying pan on low. Sauté garlic for 1 minute. Add remaining ingredients.
5.Increase heat to high and bring to boil. Reduce heat to medium and simmer for 10 minutes.
6.Serve with meatballs.
