Ingredients

Method

1.Preheat oven to 200°C/180°C fan forced. Grease a small ovenproof dish.
2.Melt butter in a large saucepan over moderate heat until foaming.
3.Add flour and chili powder; cook and stir for 1 minute or until mixture bubbies and begins to come away from side of pan.
4.Gradually add milk, whisking constantly, until combined. Cook, stirring, for 3-5 minutes or until mixture boils and thickens. Simmer for 1 minute. Stir in half the cheese.
5.Heat oil in a large frying pan over moderately high heat. Add chicken, corn, chives and spinach; toss to combine. Stir in cheese sauce until heated. Remove from heat.
6.Place crepes on a flat surface. Divide remaining chicken mixture equally among crepes. Fold into a triangle to enclose filling.
7.Transfer crepes to prepared dish. Sprinkle with remaining cheese. Bake for10-15 minutes or until cheese melts and filling is warm.
8.Serve with salad.

Transfer half the mixture to a heatproof bowl for Jacket Potatoes with Chicken chill or freeze if liked. Jacket Potatoes with Chicken: Brush 4 washed medium potatoes with oil. Microwave on High (100%) for 8-10 minutes or until tender when plEfCGi with a skewer. Cool slightly. Place on a baking tray; cut a small slice from top of each potato; discard. Using a teaspoon, scoop out potato, leaving a l cm shell. Place reserved chicken mixture and potato in a bowl; mash together. Spoon chicken mixture into potato shells; sprinkle with grated tasty cheese. Bake in an oven preheated to 200°C/180°C fan forced for 15 minute or until cheese melts and filling is hot. Serve with salad leaves.
