Cheat’s dolmades

This super-easy recipe uses spinach leaves instead of the traditional vine leaves ... and the flavoursome filling makes these dolmades small parcels of heaven.

Ingredients

Method

1.Heat oil in frying pan on high. Saute onion and garlic for 2-3 minutes, until tender.
2.Add mince. Brown well for 4-5 minutes, breaking up lumps with a spoon. Stir rice through. Allow to cool.
3.Stir herbs, juice and spices through mince mixture and season to taste. Shape level tablespoonfuls into log shapes, pressing together firmly. Place mixture on base of each spinach leaf, leaving a 2cm edge. Fold over sides, roll up firmly. Repeat with remaining ingredients. Serve with lemon wedges, yoghurt and pita bread.

MAKES ABOUT 24 These dolmades can be placed, seam-side down, in a steamer basket over a saucepan of simmering water. Steam for 1-2 minutes to warm through.
