1.In a shallow dish, combine half oil with 1 tablespoon lemon juice and zest. Season well. Add chicken. Turn to cool. Marinate for 10 minutes.
2.Preheat a char-grill or large frying pan on high. Cook chicken for 1-2 minutes each side, until golden and cooked through. Remove from heat. Cover loosely with foil and rest for 5 minutes before slicing thinly.
3.In a salad bowl, combine lettuce, beans, craisins and seed mix.
4.In a jug, whisk together remaining oil and lemon juice. Season to taste. Drizzle over salad and toss well. Serve topped with sliced chicken.
