Method
1.Preheat oven to moderate, 180°C. Lightly grease a 12-hole muffin pan.
2.Sift flour into a large bowl. Stir in capsicum, pine nuts and parsley.
3.In a jug, whisk together milk, butter and egg. Season to taste.
4.Make a well in the centre of dry ingredients. Add milk mixture all at once. Mix lightly until just combined. Be careful not to over-mix.
5.Spoon enough mixture into each recess of prepared pan to half fill. Top each with a cube of brie. Cover evenly with remaining muffin mixture.
6.Bake for 20-25 minutes, until cooked when tested with a skewer. Transfer to a wire rack to cool.
These are delicious served warm. To freeze, allow muffins to cool, wrap well or place in an airtight container, label and store in freezer for up to 1 month makes 12
