1.Preheat oven to 200°C or 180°C fan.
2.Cook cauliflower in a saucepan of boiling water for 5 minutes, until just tender. Drain. Transfer to a shallow 6 cup-capacity ovenproof dish.
3.Meanwhile, melt butter in a medium saucepan on medium heat. Stir in flour and cook for 1 minute, until bubbling. Gradually add milk, stirring until smooth. Bring to boil, simmer for 3 minutes, until thickened. Remove from heat. Stir in sour cream and half of cheese. Season.
4.Pour cream sauce over cauliflower. Scatter top with breadcrumbs and remaining cheese. Bake Mornay for 15-20 minutes, until golden and bubbly. Remove from oven. Sprinkle with paprika and serve.
