Method
1.Cut five 2cm-deep incisions into thickest parts of each breast fillet.
2.In a food processor, combine all remaining ingredients except salad leaves. Process until paste forms.
3.Rub mixture all over chicken, pressing into incisions. Set aside 30 minutes.
4.Preheat an oiled barbecue grill on high. Barbecue chicken, skin-side down, for 6-8 minutes. Turn and cook a further for 6-8 minutes.
5.Reduce heat to medium, cover with barbecue hood or a large baking tray, and cook for a further 10 minutes.
6.Transfer to a plate. Rest, covered loosely with foil, for 10-15 minutes. Slice chicken to serve. Accompany with salad leaves.
Chicken breast fillets with skin on are sometimes called chicken supremes.
