Ingredients

Method

1.Using a sharp knife, halve onions and slice thinly.
2.In a heavy-based saucepan, heat oil and butter on medium.
3.Add onion and garlic to pan. Cook 12-15 minutes, stirring often, until onion softens and turns a light caramel colour.
4.Reduce heat to low. Add sugar, vinegar and thyme to pan. Cook, stirring occasionally, 15-20 minutes, until mixture thickens to a jam-like consistency.
5.Remove from heat. Season to taste, mixing well.
6.Cool and spoon into an airtight container or jar.

Balsamic vinegar can be used instead of white-wine vinegar; it will give a darker end result.
